  • Amount: 30 dumplings
  • 1/2 lb ground pork
  • 5 oz Red King Crab Leg Meat from Petrossian, roughly chopped
  • 1/2 tbsp five spice powder
  • 1 pinch salt
  • 1 tbsp soy sauce do not use dark soy sauce
  • 1 tbsp sesame oil use the Asian dark sesame oil
  • 2 stalks scallions finely diced, reserve the greenest tip part
  • 1 tsp ginger finely diced
  • 1 tsp shao-xing cooking wine optional, I usually use but forgot today, oops!
  • 30 pieces dumpling wrappers


  1. Combine all ingredients in a mixing bowl except for the dumpling wrappers and the reserved green scallions.
  2. Add 1-2 tbsp cold water, mix with a fork or chopsticks rigorously until the water is incorporated into the filling mixture. Repeat once or twice. This is how we ensure the filling sticks together and forms a ball when the dumplings are cooked. It's called da-shui (beat, water), a technique common in making various Chinese dishes such as dumplings and wontons. I was surprised to see someone adding a raw egg to their dumpling filling on Instagram - my mother would be horrified 🙂 To make sure the filling is seasoned correctly, place a small amount of the filling (the size of a quarter coin) in a bowl, microwave for 10-20 seconds. It should change color and look cooked. Taste. Adjust the seasonings (more soy sauce or sesame oil) if desired.
  3. Have a bowl of cold water ready. Place a small amount of filling in the middle of a dumpling wrapper. Dip a finger into the water, and wet the edges of the wrapper.
  4. Start folding: first, close the middle of the wrapper.
  5. Pleat once to the right, then pleat twice.
  6. Do the same on the left side.
  7. Cook dumplings in a lightly oiled pan on medium to high heat for 2 minutes.
  8. Add a splash of water, lower the heat and cover to cook for an additional 5-7 minutes. The cooking time depends on how big the dumplings are. Store bought wrappers vary in size. You can always cut open one to see if the filling is cooked.
  9. Diagonally slice the reserved green scallions, sprinkle on the plated cooked dumplings to serve. Drizzle with chili oil if desired. I like to dip mine in Chinese dark vinegar. Try a mixture of vinegar and soy sauce too, it's delicious!
